Abasolo Corn Whiskey

Abasolo uses heavily roasted cacahuazintle corn, which is traditionally used for cooking rather than commercially. It creates a 100% Ancestral corn Mexican whisky.

After preperation, the corn is fermented for 120 hours, then distilled in small copper stills. It ages in a mixture of new and used oak to give lots of complexity and richness.

Deep, nuanced notes of roasted corn, honey, vanilla, black tea, and leather, revealed through nixtamalization (traditional grain process), are true to our Mexican ancestral corn provenance and unlike any other whisky profile.
