Chris Brockway in California is making excellent quality wines, with as little intervention as possible. Wild fermentation, producing many interesting flavours, no pesticides, and very little in the way of additions. This is their Cabernet Franc, which is easy drinking, and perfect slightly chilled. Cabernet Franc is a particularly successful grape variety in California. These grapes come from the Santa Ynez Vineyard in Santa Barbara, where warm days are balanced by temperature changes at night, keeping the acidity in the wine. A 14-day ferment in concrete tank follows, with foot stomping in the morning. It is then aged in concrete for a further 10 months.
