Champagne Fleury Sonate Extra Brut 2012

Textured, precise, with great tension. Bursting with wild flowers, grapefruit and apricot with a positively crunchy minerality. Generous yet elegant.

78% Pinot Noir and 22% Chardonnay from Fleury's finest and oldest vineyards in Côtes de Champraux and Charme de Fin and this fruit is handled as gently as possible to preserve its quality. 

The Fleury family are committed above all else to maintaining the health of the soil. As such, the vineyards are tended entirely by hand and ploughed by horse; the soil is fertilised using compost and plant extract 'teas' and the vine leaves are sprayed with quartz silica to promote photosynthesis.

In the winery, the fruit is pressed using a traditional basket press. The must is fermented by native yeast, in a combination of ceramic vats and oak barriques, with malolactic fermentation.

Official Tasting Notes
  The nose is floral with ripe autumnal orchard fruits and mature. Impressive length on the palate. Powerful with a great breadth of flavour.
