Champagne Oudiette x Fils Uni Terre Extra Brut 2017

Sharp and deeply expressive, with notes of butter and banana on the nose, followed by a burst of freshness on the palate and a saline minerality. A chewy autolytic note on the finish is accompianied by notes of white pepper and citrus.

Newcomers to Champagne production, Florence Oudiette and her daughters, Margot and Charlotte, are second and third generation growers based in Epernay. Working from 2.5 ha of vineyards in Petit Morin and Celle les Condés acquired in 2015, the sisters began making this, their first cuvée, from the 2017 harvest.

The grapes, 100% Chardonnay, was harvested in September of 2017 from their southwest-facing vineyards, Bas Vigny and Gourdaines. The juice was fermented spontaneously, by indigenous yeasts, in a 50:50 split of stainless steel vessels and oak barrels. Once fermented, the wine was aged for 10 months in oak, then bottled for secondary fermentation and 3 years of ageing. The wine was disgorged in March of 2021 and topped up with a dosage of 2g/L.
