We'd never heard of a Shiraz-Riesling blend either, but apparently this revives a style used by turn-of-the-century Aussie vignerons to distinguish themselves on the global wine stage. Winemaker Elena Brooks co-ferments Shiraz juices with Riesling skins for 7 days to diversify the flavour profile of the finished wine. The result gains extra acidity and some unusual lime-y aromatics, but Shiraz is still very much the star of this quirky production.
