A single village mezcal. Mezcal is quite often richer, and a little smokier than tequila. Made using Espadin agave which has been roasted for between 4 and 5 days over 5 different woods (Sabino, Encino, Ocote, Eucalyptus, Huamuchil), then fermented for between 6 and 8 days, for maximum flavour. The roasting times, light smoke, and long fermentation create smoke, salt, bitterness, minty notes, fruit, and so much more.
