The work that goes into making tequila and mezcal can sometimes be underestimated. For this Single Village mezcal from Del Maguey, the agave takes 12 to 18 years to become ripe, before it can be harvested and roasted for 30 days to get the required level of smoke and sugar, to then be fermented for 6-8 days, and distilled in very small copper stills. One of the rarer types of agave used, it takes longer to age, and is a fair bit smaller than normal agave, so more is required. But the flavours are worth all this effort.
