Derrumbes Durango Mezcal

Derrumbes Durango is produced in Nombre de Dios, a city in northern Mexico in the state of Durango, from Durangensis, a variety of agave endemic to the region.

The agave piñas are cooked underground in a stone pit, before crushing by hand and fermenting the aguamiel in wooden vats and clay vessels. The resulting musto is distilled in a pot still with a wooden pot and a copper stillhead. It is bottled without ageing to preserve the intensity and complexity of the spirit.
