They create a pearl barley mash, ferment this with a Belgian saison brewer’s yeast (funky flavours), distil this with habanero peppers and blend with habenero vinegar. It takes your tastebuds in all sorts of different directions, with sweet, malty, acidic and fruity characteristics, but no spice.
