Manzanilla is very similar to Fino sherry, both being wines with flavours that compliment the beginning of a meal, rather than dessert. Aged under yeast in the solera system (a system of periodically adding older wines to younger wines, creating complexity) for an average of three years, the main difference is the ageing process takes place in Sanlucar de Barrameda, nearer the sea than Jerez. The change in temperature and humidity near the sea causes a thicker layer of yeast, creating a slightly lighter wine than a Fino, with more seaside notes.

Official Tasting Notes Pale, straw yellow in colour. Decidedly tangy, yeasty and salty nose. Lighter, crisper and more crackly than its older sibling - Fino. The palate lures you in with soft apple and citrus flavours, then attacks with a savoury nutty tang, and finishes with a salty reminder of the fresh spray of the sea.
