Thick and treacly, with molasses and Christmas cake coming to mind, PX sherry is a brilliant winter warmer, but it can also work on ice cream all year round, or if you have a sweet tooth. The Pedro Ximenez grape is harvested and dried for two days in the hot Spanish sun. This causes the sugar in the grape to concentrate, producing such a full flavoured wine. The grapes are partially fermented, and then grape brandy is added, meaning much of the sugar is unfermented, resulting in lots of the syrupy notes in the glass. It is aged for an average of 12 years in oak cask in the solera system.
