Ripe fruit (the 'S' here refers to Spatlese quality) is hand harvested & fermented for 14 days on skins in stainless steel, with 4-5 months ageing on fine lees. Spicy & floral, with peachy fruit on the vibrant, nervy palate. Structured & elegant, with a bright acid backbone.
