Iona Pinot Noir 2021

Vibrant, succulent and gently perfumed, with savoury complexity, a touch of spice and fine powdery tannins - A great pairing for lamb shanks or goulash.

Pinot Noir from a selection of the coolest climate vineyards in the Western Cape. These Elgin vineyards, on sandstone and silica-clay soils, are cultivated in accordance with organic practices and a minimal intervention philosophy.

The fruit is harvested and the bunches sorted by hand. The grapes are mostly destemmed, reserving 10% as whole bunches, and gently pressed then cold-macerated for 5-7 days prior to fermentation. The must is fermented by native yeast in open-top vessels, with gentle punching down and pumpovers twice daily. The wine is aged for 12 months in 300L and 500L French oak casks (33% new) on lees and with full malolactic fermentation. After ageing, the wines are transferred to stainless steel vessels for blending and 2 months of stabilisation and clarification prior to bottling.

Official Tasting Notes
Succulent black cherry aroma, bright but delicate and hints of forest floor, with underlying floral and spicy notes. On the palate, the wine is powerful, with silk-textured length.
