Mezcal tends to be a bit richer and smokier than tequila, combining some of the wonderful flavours from Mexican cuisine in their national drink (smoke, salt, green peppers, agave sweetness, spice, earthiness). Agave takes between 7 and 10 years to grow ripe enough to harvest. For mezcal it is then generally more heavily roasted than tequila, mashed, fermented and distilled.
