La Higuera Wheeleri Sotol

La Higuera produces a range of Sotol from different species of Dasylirion (AKA Desert Spoon) from the state of Chihuahua in Northern Mexico.

This Sotol is made from Dasylirium wheeleri. The plant's long leaves are removed, and the cores are cooked then milled by hand. The resulting aguamiel and fibres are wild-fermented in pine vats, then double distilled in copper alembic stills.
