Los Siete Misterios Doba Yej Mezcal

Los Siete Misterios is dedicated to showcasing the spirit, heritage and tradition of Mezcal.

Doba-Yej is the ancient Zapotec word for Agave Espadin, from which this mezcal is made. In this case, it is sourced from the towns of Matalan, San Dionisio and Yautepec, in Oaxaca. The agave plants are harvested only once fully mature, then the piñas are cooked in stone-lined pits. The cooked piñas are milled by hand with a wooden mallet, or by a horse-drawn tahona. The resulting aguamiel and fibres are fermented spontaneously in open wooden vats, then the musto is double distilled in copper pot stills.
