This mezcal is made from two varieties of Maguey - Espadin from Oaxaca and wild Tobalá from Puebla. The varieties are processed seperately by first roasting the Maguey hearts (piña) in traditional stone pits, fermenting, and then double distilling them in copper pot stills. The two types of agave spirit are then married together to create Ojo de Tigre. Espadin lends the smokiness and the Tobala lends an herbaceous quality, with the resulting Mezcal being complex, yet balanced and approachable.
