At the foot of Mt Macedon - 500m above sea level - lays the Colbinabbin vineyard, in an area historically known to the Wurundjeri as Warekilla, or the Place Of Changing Winds. The organic vineyard's 3 hectares are very densely grown and have astoundingly low yields; 10 times the density of your average vineyard, and 10 times less fruit produced. Between Robert Walters and Remi Jacquemain of PoCW, and renowned Northern Rhone growers, Alain and Maxime Graillot, they have created this Syrah from the amazing 2019 harvest, with a Rhone valley slant. Using whole berry and whole bunch fermentation, with some full carbonic maceration, they aimed to bring perfume and finesse to the power of Heathcote. Fermentation took place in stainless steel and concrete, while the aging used large, neutral wood and older barriques to minimise the oak influence. The result is an incredibly fresh and juicy wine. Soft and smooth palate, with cherries, plums, sweet spice and a touch of meaty and peppery savoury notes. Good definition and focus with an intense finish.
