Primitivo Collantes Fossi Amontillado

Primitivo Collantes bodega is located outside the Zona de Crianza (maturation zone) so their wines are not technically sherries. Their Amontillado Fossi spends 5 years ageing under flor, 10 years oxidatively, 15 years average in total. The base wine comes from grapes grown in the Pazo Matalian. Dried fruits, roasted nuts, rounded & less bitter than some Amontillados.
