Rum

What? A spirit made from distilling fermented molassed or sugar cane juice. Pot or column stills can be used.

Where? Principally the Carribbean, Central America, and South America.

When? Inextricably linked to the history of the slave trade, and the planatations of the 17th Century Carribbean. The British Navy served rum daily to their sailors from 1655 to 1970.

How? With coke for a Cuba Libre, mixed with tropical fruit juices for a rum punch, or sipped on its own or with ice if the quality merits it.

Tip For Beginners: Rum matures quickly in the heat, so we would argue sipping rum normally peaks between 8 to 12 years old.
