This non-alcoholic Sparkling rosé wine is made from verjuice and Kentish Kiss apples, enriched and elevated by wild Lapsang, gold curls and Mountain Oolong teas from the highest slopes of Nepal. Fresh and linear, lifted by heather honey resulting in a poised and delicately structured cuvée.
Food PairingAged Comté or Ossau-Iraty, or for a sweeter occasion, dark chocolate with pink peppercorn.
Official Tasting Notes Appearance- A pale, lustrous blush with golden undertones and a delicate, persistent bead. Nose- Expressive and layered. The first impression reveals rose petal and wild strawberry, followed by nuances of smoked tea, quince and orange zest. As it opens, notes of dried blossom, heather honey and subtle spice unfold, offering both warmth and restraint. Palate- Textural and poised. The Kentish Kiss apples provide structure and grip, while Lapsang and Mountain Oolong lend quiet smokiness and depth. Gold Curls tea lifts the mid-palate with floral clarity. The texture is generous yet finely etched, a harmony of fruit, tannin and aromatic tea. Finish- Long and expressive, carried by delicate minerality and a whisper of salinity. The impression is of a rosé both precise and expressive. Elegant, smoky and radiant, with a resonance that lingers rather than insists.
