Complex, textured and concentrated with ripe orchard fruit and tart gooseberry combined with an unctuous nuttiness and a floral, slightly flinty note towards the finish - a delightful pairing for fresh seafood and poultry.

Cantine Nicosia is based on the south-eastern side of Mount Etna in Trecastagni, Sicily, at the foot of the volcano. Here, fifth generation winemakers, Francesco and Graziano Nicosia are dedicated to capturing the unique qualities of grapes grown around Etna. Their modern winery is purpose built for the pure expression of these qualities in Nicosia's wines.

This Etna Bianco is made from 95% Carricante and 5% Minella grown in the contrada of Monte San Nicolò in the sub-region of Trecastagni on the south-eastern slopes of Mount Etna. This site has a large diurnal range and the vines are planted in mineral-rich sandy volcanic soils composed of eruptive materials including red pumace, which drains well and is rich in potassium.

The grapes are hand harvested and cold-macerated for 24 hours, before destemming and gentle pressing. The juice is then fermented for 20-25 days at a controlled temperature of 13-15°C. The wine is aged for a time in stainless steel vats, on fine lees with frequent battonage. After assemblage and bottling, the wine is cellared for 4 months before release.

Pronounced and complex nose with savoury, nutty aromas and hints of fennel and white spice. Ripe and textured with lightly honeyed stone fruit, balanced by minerality and sappy acidity.
