3 Fonteinen Cuvée Armand & Gaston

3 Fonteinen was founded as a Geuzestekerij (Lambic Blendery) at some time between 1849 and 1883, based at an inn in the town of Beersel, just south of Brussels. The name, 3 fountains, is a reference to the hand pumps for serving the inn's three types of beer: lambic, faro and kriek. This name was chosen in 1953 when the inn was purchased by Gaston and Raymonde Debelder.

It was not until 1998 that the brewery itself was constructed and 3F began to brew their own lambic under the management of Armand Debelder. To this day 3F continues to operate as a Geuzestekerij as well as a brewery, many of their own blends containing some lambic fermented from wort produced at Lindemans, Lambiek Fabriek and De Troch.

The word "Geuze" or "Gueuze" refers to a blend of lambics that have been aged for one or more years. Most often, a geuze is a blend of 1, 2 and 3 year old lambics - the younger providing sharpness and still-unfermented oligosaccharides, which ensure the spontaneous carbonation of the beer in bottle, and the older imparting a mellow, slightly oxidative complexity to the blend.

Cuvée Armand & Gaston is differentiated from 3F's Oude Geuze by the fact that all of the lambic in the blend was produced at the brewery, rather than being blended with lambic from elsewhere. Each numbered blend consists of lambic of various ages from various cask types, often made with barley, wheat and hops of specific varieties and origins. For each blend, this composition is detailed on the label.
