In the pre-refridgeration era, the low fermentation temperatures required for lager brewing posed a significant challenge in the hot climate of California. This challenge was first overcome in 1876 by a small brewery called Boca who made use of a mountain ice pond as a rudimentary method of refridgeration, or so the story goes.
