Bodegas Lustau Manzanilla Papirusa

Crisp and delicate, with notes of apple skin, delicate floral citrus and just a whisper of yeasty flor funk - The perfect pairing for seafood or fish tapas such as boquerones.

A base wine of Palamino Fino is fermented to dryness and aged biologically, under a layer of yeast (the flor), with fractional blending in soleras in the seaside town of Sanlúcar de Barrameda. At the time of bottling, this Manzanilla has an average age of 5 years.

The winemaking method for Fino and Manzanilla is identical, apart from the fact that Manzanilla can only be produced in the town of Sanlúcar de Barrameda. In Sanlúcar, a combination of the local microclimate and generations of selective flor yeast cropping means that, while the process is the same, the end result is very much distinct.

Official Tasting Notes
This Manzanilla is laced with sea breeze scents and pleasant chamomile and flor aromas. Bone dry and light, fresh and crisp, with a hint of sea salt on the palate. Delicate and refreshingly acid with a lingering aftertaste. Papirusa means “elegant and beautiful”. It was the name of the doll that Emilio Lustau gave the daughter of Joaquín Burgos, first manager of Bodegas Lustau in the ’40s.
