Bollinger PN TX17 Brut NV

Expressive, complex and linear, with a fine, elegant mousse and notes of white stonefruit, baked apple, subtle spicy brioche and a driving acidity to finish - a wonderful aperitif but also a remarkably good pairing for a decadent savoury pastry like a cheese mille-feuille.

This limited cuvée is the third release from Bollinger's PN series - a celebration of what makes Bollinger so special. Namely, its fine Pinot Noir vineyards. Whereas the two previous releases have focussed on Verzenay, this cuvée uses Pinot Noir predominantly from the less frequently seen Premier Cru vineyard of Tauxières, with smaller proportions from Avenay and Verzenay.

The base wine of this Blanc de Noirs comes from the 2017 vintage, with reserve wines from as far back as 2013 to complete the assemblage. It was bottled with a dosage of 4 g/L.
