Intensely aromatic and fruity, and surprisingly hefty for a Frappato. Juicy red cherries and rose petals burst out of the glass, with a subtle herbaceousness following on the palate. Bright, zippy acidity and assertive tannins provide balance and structure - this would work beautifully with aubergine parmagiana.

Cantine Nicosia is based on the south-eastern side of Mount Etna in Trecastagni, Sicily, at the foot of the volcano. Here, fifth generation winemakers, Francesco and Graziano Nicosia are dedicated to capturing the unique qualities of grapes grown around Etna. Their modern winery is purpose built for the pure expression of these qualities in Nicosia's wines.

This single-variety Frappato is made from grapes sourced exclusively from organically farmed vines planted in mineral-rich, sandy volcanic soils, at 200m above sea level. This volcanic soil imparts an incredible intensity of ripe fruit and a distinctive minerality.

It is occasionally said that good winemaking is about not getting in the way of the grapes, and this appears to be reflected in the minimalist approach taken here. The grapes are havested by hand and undergo maceration and fermentation for 10-15 days at a controlled temperature between 22°C and 24°C. After a brief period of ageing in stainless steel tanks to settle and stabilise the wine, the wine is bottled and cellared for 2 months before release.

Official Tasting Notes
Vibrant, youthful nose of crushed red fruits, redcurrant and wild berries, with hints of earthy spice. Light and refreshing on the palate with juicy red berry and sour cherry characters offset by a burst of fresh acidity and gentle tannins.
