Cantine Nicosia Organic Grillo 2022

Crisp, aromatic and complex, with bright citrus and floral notes and an underlying herbaceousness. A subtle weight on the palate balances nicely with just enough acidity, which lingers on the long and satisfying finish - a classic pairing for grilled fish and vegetables.  

Cantine Nicosia is based on the eastern side of Mount Etna in Trecastagni, Sicily, at the foot of the volcano. Here, fifth generation winemakers, Francesco and Graziano Nicosia are dedicated to capturing the unique qualities of grapes grown around Etna. Their modern winery is purpose built for the pure expression of these qualities in Nicosia's wines.

This wine is made from 100% Grillo sourced from organically farmed vineyards in southeast Sicily, predominantly from sandy clay soils in Vittoria, 200m above sea level.

The grapes are harvested by hand and destemmed before a gentle pressing. The juice is fermented at a controlled temperature (15-20°C) for 15-20 days, before a brief period of settling and stabilisation in stainless steel vats. The wine is then bottled and cellared for 2 months prior to release.

Official Tasting Notes
Lightly honeyed nose with subtle stone fruit and floral notes, aromatic herbs and fennel. Bright and fresh on the palate with ripe apricot fruit, nice depth of flavour and a crisp, savoury finish.
