Champagne Fleury Blanc de Noirs Brut NV

Elegant, ripe and weighty, with tart raspberries, soft white peach and rose petals. Long with a beguilingly delicate bubble structure - An ideal pairing for sole meunière.

A delightful Blanc de Noirs from the original biodynamic Champagne house. This Pinot Noir comes from the chalky slopes of the Seine valley in southern Champagne, where the Fleury family are committed above all else to maintainiing the health of the soil. As such, the vineyards are tended entirely by hand and ploughed by horse; the soil is fertilised using compost and plant extract 'teas' and the vine leaves are sprayed with quartz silica to promote photosynthesis.

In the winery, the fruit is pressed using a traditional basket press, the must is fermented by native yeast, with malolactic fermentation, and a proportion of the base wine is aged in oak barrels as a nod to tradition.

Creamy or buttery white meat and fish dishes, or as an aperitif.

Red summer berries and toasted almonds on the nose, bright raspberry and redcurrant berries on the palate. Rich and long.
