Champagne Fleury Rose de Saignee Brut NV

Fun, juicy and interesting, with enchanting notes of raspberry, quince, blood orange, toasted nuts and herbs and a savoury, long and rounded finish - just looking at this champagne makes me crave seared tuna!

This 100% Pinot Noir rosé is made in the 'Saignée' method, which increases skin contact resulting in a richer and more concentrated rosé. The grapes come from the chalky slopes of the Seine valley in southern Champagne, where the Fleury family are committed above all else to maintainiing the health of the soil. As such, the vineyards are tended entirely by hand and ploughed by horse; the soil is fertilised using compost and plant extract 'teas' and the vine leaves are sprayed with quartz silica to promote photosynthesis.

In the winery, the fruit is pressed using a traditional basket press, the must is fermented by native yeast, with malolactic fermentation, and a proportion of the base wine is aged in oak barrels as a nod to tradition.

Strawberry, breadcrumbs and vanilla on the nose, raspberries and lovely umami notes on the palate, with a generous texture and persistent mousse.
