Levasseur's oldest vines - planted in 1973 at ‘Les Gautelleries’ in Cuchery - produce the fruit for this Champagne. Top quality ripe fruit, and low yields are the key to this cuvee, which is based on the 2015 vintage, with 30% reserve wines. Because it’s bottled without sugar additions, the Brut Nature spends an extra year on lees relative to the Brut (4 years in total) in order to soften the edges, and this also contributes to the development of lovely nutty/brioche autolytic notes, and subtle gingerbread spice. This has lovely bright acidity, and a distinct white pepper note on the firm, saline finish.
