Produced from the fruit of Levasseur’s oldest vines, planted in 1973 at ‘Les Gautelleries’ in Cuchery. Low yields, and top quality ripe fruit are the key to this cuvee, which is based on the 2017 vintage, with 35% reserve wines, and made up of a blend of 80 % Pinot Meunier, 15% Pinot Noir, and 5% Chardonnay. The wine undergoes alcoholic and malolactic fermentation in stainless steel, before bottling without filtration and ageing for three years on lees before bottling with a dosage of 9g/l. Honeyed fruit, lemon tart, bruised red apple, creamy notes, and a fine mousse.
