Whisky lovers will recognise the name Paul Launois from the limited bottlings of Ardnamurchan single malt that were matured in casks from this independent Champagne house.

Julien and Sarah Launois are the current custodians of 19 plots, just over 6.5Ha, of chardonnay vines in Grand Cru Mesnil-sur-Oger, which have been tended by the Launois family for generations. It was only in 2015 that Julien and Sarah founded Champagne Paul Launois, named for their son. Prior to this, the Launois family's grapes were sold to their local co-operative.

Monochrome #4 is a blanc du blancs made exclusively using fruit from the Launois family vineyards, including that from a site called Haut d'Aillerand - a north-east facing, gentle slope on a soft chalk soil - which gives the wine it's mineral, chalky backbone. The grapes are whole-bunch pressed in a traditional basket press, and the resulting compacted cake of stems, skins and flesh is then loosened and redistributed with a pitchfork for further pressing in a method called La Retrousse. This method releases additional juice without the extraction of tannins or too much colour from the skins.

The resulting must, from the 2018 vintage, made up the base wine which was fermented in a combination of stainless steel (93%) and barrel (7%) and underwent malolactic fermentation.

The assemblage of this non-vintage also includes 30% reserve wines, though this proportion changes from release to release. The wine was bottled in May 2019, then disgorged in June 2021 and topped up with a dosage of 2 g/L. This low dosage results in a champagne with the designation of Extra Brut.
