Derrumbes San Luis Potosi Mezcal

This Mezcal is made exclusively from wild Salmiana agave from San Luis Postosi. The agave piñas are cooked in a stone oven fueled with the dried leaves cut from the agave plant, before milling with a traditional tahona and vermenting with wild yeast in masonry vats. The fermented musto is distilled in a copper pot still.

An incredibly unique mezcal that reflects the flavors of its surroundings like no other. This floral and herbaceous mezcal from the village of Charcas has just the right touch of sweetness to balance its delicate intensity.
