Distilleria Romano Levi Grappa di Moscato

The Levi family have traced their distilling pedigree as far back as the 17th century. The family of distillers, or "grapat" were based in the far north of Italy, in the alpine valleys of Lombardy, but would travel with their mobile stills to Piedmont for the yearly harvest to distil grape pomace, leftover from winemaking, into Grappa.

Many such distilling families eventually moved South to wine producing regions to found permanent distilleries. Serafino Levi (father of Romano) settled in Nieve, Piedmont, in 1925 and the distillery was born.

Grape pomace from DOCG Moscato d'Asti vineyards the villages of Nieve, Trezzo and Treiso is fermented directly, without the addition of water. The fermented pomace is then submerged in water, and transferred to an open flame alembic still for distillation. The distillate is then aged at a controlled temperature for 6 months in 225L barriques made from various types of wood.
