Domaine Castera Jurançon Caubeigt 2021

A delightful dessert wine with an elegant balance of richness and freshness. Candied tropical fruits, blossom and dried apricot - Pairs beautifully with fruit tarts or the richest paté, or rillettes you can find.

100% Petit Manseng from the a small number of plots in the lieu-dit of Caubeigt in Jurançon. These plots were planted between 1997 and 2000, on slopes with a gradient of 10-20% with West and Southwest exposure, with pebbly clay loam soils.

The fruit is harvested by hand, late in the year, at the start of November. The grapes are pressed slowly and gently, as whole bunches, and the must is left for a short period to settle and clarify. The clarified juice is fermented by indigenous yeasts in oak casks of different sizes, then aged on lees in these casks for 8 months. The wine is then aged for a further 4 months in stainless steel before bottling.
