Domaine du Colombier, headed by third generation winemaker, Florent Viale, have garnered a reputation as one of the finest growers in Hermitage and Crozes-Hermitage. Their 13 hectares of vineyards are dotted around some of the best sites near the town of Tain l'Hermitage and the commune of Mercurol-Veaunes, including 1.5 hectares in Les Beaumes at on the slopes of the Hill of Hermitage planted by the Viale family in 1929.

For their Crozes-Hermitage, the domaine uses fruit from very close to Hermitage, combining the smoky, peppery influence of grapes grown on granitic limestone soils just north of Tain with the generous fruitiness lended by the pebbly red clay soils of Mercurol.

In his winemaking, Florent Viale focuses on the expression of ripe fruit from these terroirs, while maintaining a cetrain elegance and tension of structure. The grapes are completely destemmed and fermented in a combination of cement, stainless steel and large oak vessels, before ageing for around 18 months in 600L French oak demi-muids (<20% new). This prolonged period of ageing clarifies the wine by gravity sedimentation and the wine is bottled without further filtration.

The Cuvée Gaby, named for Florent's grandfather, is assembled from a selection of the finest of these casks, typically those ageing wine from the family's oldest vines.

Opulent and open yet with tension and chiselle structure. Flavours of plum, bramble coal-dust and brighter touches of cherry and mineral. A complex mix of fruit and savoury, hearty in structure but vivid too. A cut above other Crozes Hermitages.
