In Andalucia, on the hills south of Montilla, a few hundred kms away from Jerez, there is area which is perfect for the cultivation of Pedro Ximénez grapes. These are the traditional grapes of the region. Very limited drawn from a single cask, 1000 375ml bottles have been produced with great balance and flavours to be savoured.
Food PairingJamon Iberico and aged manchego cheese.
Staff Tasting Notes 100% Pedro Ximenez, rather than the more usual Palamino Fino. Classic Amontillado composition but with a fuller body and greater complexity. Sweet and dusty nose, with dried grape skins. Confectionary flowers, salted, pickled pear on the palate and a hint of tobacco and smoke on the finish.
