The Henschke family have been making Mount Edelstone single vineyard Shiraz for almost 70 years. This 16 hectare vineyard was purchased by fourth generation winemaker, Cyril Henschke, in 1974 though the family had been buying fruit to make this wine from the previous owner for over 20 years prior. The 2015 vintage is the 63rd release of this wine.

This wine in 100% Shiraz picked exclusively from the old, low-yielding, biodynamically farmed vines of Mount Edelstone, planted in red clay soils and trained predominantly on a Scott Henry trellis to promote sun exposure and early ripening. 2015 was an excellent vintage for this vineyard, resulting in grapes with an exceptional concentration of flavour and a higher than average acidity.

The fruit was harvested by hand, in the cool early morning, keeping the grapes from each block seperate throughout vinification. The grapes were destemmed and macerated in open-topped concrete fermentation vessels. At the start of fermentation, the cap of grape skins was submerged below the level of the must, and fermentation proceeds, with twice-daily pump-overs, for 7-10 days. The still-fermenting must was then pressed to a combination of new and old French (78%) and American (22%) oak hogsheads to finish fermentation and age for 18 months. The finished wine is blended and bottled then cellared for two years before release.

Very deep crimson in colour. Distinctive Mount Edelstone Shiraz aromas of sage and crushed black pepper lead to spiced plum and black cherry characters, enveloped by crushed herbs with cedar nuances. Vibrant, wild forest berries are layered beautifully into a rich and elegantly textured palate with fine velvety tannins and lingering notes of black pepper and sage for an extremely long finish.
