Hidalgo Amontillado Napoleon

Elegant, complex and moreish, with notes of almond and hazelnut, orange zest and a saline finish - A delightful aperitif.

Established in 1792, Bodegas Hidalgo is one of the oldest Sherry producers still in operation and sits in the very heart of Sanlúcar de Barrameda. To this day it is still operated by the Hidalgo family, currently the 8th generation.

This Amontillado starts its life as a Manzanilla is made from Palamino Fino from the old vines of Hidalgo's high-altitude El Cuadrado estate in Balbaina Alta, famed for its Albariza (calcium carbonate-rich limestone) soils. Albariza soils are excellent at retaining water which is vital in the baking heat of an Andalucian summer.

The grapes are harvested, and the only the free-run juice is fermented to dryness. The base wine is added to the La Gitana solera where it ages under a protective layer of flor yeast, with fractional blending. The wine is tasted regularly and the most suitable casks are selected to be fortified and undergo a further period of oxidative aging, turning the Manzanilla into Amontillado.

Hues of mahogany and rich hazelnut aromas. Full and long on the palate with subtle nuttiness and a dry and refined finish.
