Hidalgo La Gitana En Rama Manzanilla

Arguably the classic Manzanilla, here in its purest form. Incredibly fresh, bone dry and complex, with notes of apple skins, salinity, herbaceousness, citrus pith and a distinctive note of bread dough - The perfect pairing for boquerones.

Established in 1792, Bodegas Hidalgo is one of the oldest Sherry producers still in operation and sits in the very heart of Sanlúcar de Barrameda. To this day it is still operated by the Hidalgo family, currently the 8th generation.

This Manzanilla En Rama (Raw, unfiltered) is made from Palamino Fino from the old vines of Hidalgo's high-altitude El Cuadrado estate in Balbaina Alta, famed for its Albariza (calcium carbonate-rich limestone) soils. Albariza soils are excellent at retaining water which is vital in the baking heat of an Andalucian summer.

Once optimally ripe, the grapes are harvested. For La Gitana, only the free-run juice is used, and this is fermented to dryness at a controlled temperature. The fresh wine is fortified to 15% and introduced to the first criadera of Hidalgo's La Gitana solera in the cellar of San Luis. The wine is aged in the solera, with fractional blending, under a layer of yeast (flor) specific to the microbiome of Sanlúcar de Barrameda. The Manzanilla En Rama is blended from only 35 of Hidalgo's finest casks and bottled without filtration.

The end result is, as the bodega tells it: "almost as if you had visited the bodega in spain and dipped your glass in the barrel."

Complex, spicy and delicate aroma, on the palate, this wine is elegant, light and fresh underscored by a salty tanginess, influenced the close proximity of the cellars in Sanlúcar de Barrameda to the sea. A touch of citrus bitterness gives this wine a fresh finish. One sip and you’ll feel like you’ve been transported to the Bodega and treated to an ice cold glass of Manzanilla direct from the barrel.
