Hidalgo Oloroso Faraon

Deep, complex and powerful, with a precise balance of generosity and austerity. Notes of orange, apricot, burnt sugar, roasted nuts and an intriguing combination of umami and salinity - A classic pairing for cured meats and chicharrones.

Established in 1792, Bodegas Hidalgo is one of the oldest Sherry producers still in operation and sits in the very heart of Sanlúcar de Barrameda. To this day it is still operated by the Hidalgo family, currently the 8th generation.

This Oloroso is made from Palamino Fino from the old vines of Hidalgo's vineyards in Balbaina and Miraflores, famed for their Albariza (calcium carbonate-rich limestone) soils. Albariza soils are excellent at retaining water which is vital in the baking heat of an Andalucian summer.

The grapes are harvested, vinified and fermented to dryness before fortifying with grape spirit to a high enough strength to kill the yeast. This fortified wine is then introduced to the first criadera of Hidalgo's old American oak Oloroso solera in Sanlúcar de Barrameda, where it is aged oxidatively with fractional blending. At time of bottling, this Oloroso has an average age of 7 years.

Intensely rich pervading walnut aromas. The palate is dry, intense, rich and deep with a long and powerful flavour.
