Hidalgo Pedro Ximenez Triana

Sweet, syrupy and indulgent, bursting with figs, dates, prunes, raisins and treacle with a texture to match - Serve chilled as a dessert in itself or poured over vanilla ice cream.

Established in 1792, Bodegas Hidalgo is one of the oldest Sherry producers still in operation and sits in the very heart of Sanlúcar de Barrameda. To this day it is still operated by the Hidalgo family, currently the 8th generation.

Pedro Ximénez grapes are dried in the sun on straw mats to concentrate the flavours and sugar prior to vinification. Fermentation halts naturally due to the high concentration of sugar in the must, resulting in a sweet base wine. This wine is fortified for stability and aged, oxidatively, in Hidalgo's old American oak solera in Sanlúcar de Barrameda, with fractional blending.

Official Tasting Notes
Deep caramel in colour. Bursting with treacle, toffee, raisins and prunes. The palate is opulently sweet, a velvety texture with flavours of figs and caramel. The ultimate sticky wine.
