Holyrood New Make Spirit Chocolate Malt

A new make spirit from Edinburgh distillery, Holyrood. They were inspired by the brewing and distilling history of the town. This is one in a series which takes a look at different elements of the brewing process with each variety.

The chocolate malt release is the second of the four to shine a light on speciality malts - but this time from the darker side. Chocolate malt makes up 10% of the mashbill recipe, on top of 90% distiller's malt, to offer a contrast to their Crystal Malt version. Chocolate malt is roasted, to give brewers a rich chocolate, dark fruit, coffee, and roasty profile.

Official Tasting Notes

Nose – Distinct, nutty and rich, with coffee and rich cocoa.

Palate – A big hit of bitter coffee and rich dark chocolate, there are savoury notes with rich malt and salt.

Finish –  Short with a subtle bitterness.
