A classic of the ages. Rich yet clean, and bustling with florality, ripe and dried fuits and a subtle minerality - there are more flavours to discover with every taste and each sip leaves you wanting more.

This historic dessert wine is made from Muscat de Frontignan (not to be confused with Muscat de Alexandria, as easy as that would be) drawn from 9 vineyard blocks in the Klein Constantia estate, in the coastal outskirts of Cape Town, Western Cape. These vines are planted in clay-rich decomposed granite soils on North- and East-facing slopes which have good exposure to sunlight, while the atlantic breeze cools the vineyards.

The grapes are harvested in bunches by hand in the early hours of the morning when it is coolest. At the point of picking, the fruit ranges from fully ripe to raisined and concentrated, in roughly equal proportions. The fruit is meticulously sorted and vinified as individual blocks for later blending. The ripe 'green' berries make up the base of the wine, while the raisined fruit is used to create a far sweeter Essentia fraction.

Once sorted, the fruit from each block is cold-macerated for up to 2 weeks in the presence of a non-Saccharomyces yeast which protects the must from bacterial infection while imparting complexity through non-alcoholic fermentation. The must is then gently pressed into 500L casks for alcoholic fermentation over the course of 6 months to a year. From batch to batch, fermentation halts naturally, leaving residual sugar in the wine, or is arrested by the addition of the Essentia, which raises the wine's sugar concentration significantly causing osmotic stress to the yeast.

Post-fermentation, the wine is aged on lees in a combination of new French oak, French acacia and Hungarian oak for a minimum of 3 years. The wine from these barrels is blended in proportions determined by an intenational panel of partnered winemakers, sommeliers and wine judges. The target residual sugar content of the blended wine is between 165 and 175g/L.

Bright and yellow gold in colour. The nose is layered with complex flavours of Seville marmalade, ginger spice and grapefruit. A rich and luxurious mouthfeel, the wine is full bodied, fresh and vibrant. The palate is balanced showcasing a perfect harmony between salinity, acidity, spice and sweetness. Concentrated with suspended density, it concludes with a pithy astringency and a lingering finish.
