Le Clos du Serres Saint Pauline Terasses du Larzac 2020

Intense, complex and well balanced. A bright florality up front gives way to a rich vein of tart cassis and ripe plum. Firm tannins give structure without overwhelming the palate - All the classic Syrah pairings apply, but this wine has the intensity and acidity to stand up to fattier, gamier meats too.

A blend of Syrah (60%), Cinsault (20%) and Carignan (20%) from the pebbly soils of the Lieu-dit of Sainte-Pauline in AOP Terrasses du Larzac. This region benefits from a large diurnal range - a difference of up to 20°C between day and night - which allows for a long ripening period and exceptional phenolic ripeness at harvest.

The fruit is harvested by hand, plot by plot, picking only when the grapes are optimally sugar-ripe and acidic, and each plot is vinified seperately. The grapes are destemmed and macerated for between 10 and 15 days in open concrete vats and fermentation occurs spontaneously. The wines are blended and aged in concrete to soften tannins while preserving acidity.
