Bodegas Lustau Amontillado Los Arcos

Amontillado is where Lustau shines, even at their entry level. A delightful balance of freshness and oxidative richness with distinctive notes of hazelnut and herbaceousness - A rare pairing for artichokes and asparagus but also works with a variety of cured meats.

Palamino Fino is fermented to dryness then transferred to casks for biological ageing under a layer of yeast (flor). The wine ages in this fashion in a solera system  with fractional blending at least once per year. After a period of biological ageing, the wine is fortified, killing the flor yeast, and the wine ages oxidatively in the solera system for an equivalent timespan before bottling. At the time of bottling, this sherry has an average age of 8 years.

Official Tasting Notes
Amber in colour, with hazelnut aromas on the nose. Light, soft and round on the palate, with a long aftertaste.
