From the growers at Terres Fidèles, the philosophy of connecting the spirit of the land and sea to the wine itself. Spanning the vast terrains of Southern France, from the valleys on the Pyrénées to the Mediterranean ocean. Located in the heart of Haute Vallée de l’Aude, Montsablé Réserve is a shining example of wines grown in the coolest part of the Mediterranean, due to the high altitude and chillier coastal winds. That, combined with the limestone soil, produces elegant and fruity wines. For the Montsable Reserve Chardonnay, the vines selected are 30 years old, and using 100% chardonnay variety, grown on the foothills in the Haute Vallée of Limoux, and grown on Argilo Calcaires soils. The climate creates a better level of acidity and a longer ripening process. The wine is aged in French new oak casks that range from 1,2 and 3 years old and spends time on lees before blending. The flavour produced is elegant with a mineral undertone and a silky-smooth texture. It is floral and soft, with fresh peach and vanilla cream, with a touch of toasted notes. This pairs perfectly with rich dishes with heavy cream sauces, as well as many salmon or lobster dishes. A luxurious wine.
Food PairingIdeal with richly flavoured fish dishes, langoustines, lobster, trout or salmon, rich enough to handle creamy sauces.
Staff Tasting Notes Fresh florals and stonefruit on the nose. The palate is ripe and round with a bit of well-integrated oak influence, leading to a clean finish with a hint of bitterness and just enough acidity.
