From the growers at Terres Fidèles, the philosophy of connecting the spirit of the land and sea to the wine itself. Spanning the vast terrains of Southern France, from the valleys on the Pyrénées to the Mediterranean ocean. This Pinot Noir is from the vineyards of Haute Vallée de L’Aude, situated on the slopes of the Pyrénées. There is a cooler climate, with less sun and a heavier rain fall. That combined with the limestone soil, and a Burgundian style of vinification creates a wine with rich dark fruits and fresh summer fruits on the nose. This was matured in stainless steel vats, with 10% aged for 3 months in French oak, which lingers in the taste, adding a subtle spice on the finish. Best served slightly chilled and with rustic meaty dishes.
Food PairingBeautiful drinking on its own or with game, robust fish or slow cooked stews.
Staff Tasting Notes Tart red cherries on the nose, which persist on the palate with a characteristic acidity. Very light in body but with a nice tannic grip.
Official Tasting Notes Aromas of dark cherry and blackberry plus a rich, round palate of red berry fruit are complemented by toasty, vanilla notes that bring a touch of spice to the finish.
