Orval Trappist Beer

Brewed in the confines of l'Abbaye Notre-Dame d'Orval in Wallonia, Belgium, under the supervision of the abbey's Cistercian monks, Orval is one of the few remaining authentic trappist beers.

Orval is notably differentiated from other belgian golden ales in two main ways: Firstly, it is more heavily hopped than most, imparting a fresh bitterness and distinctive florality to the beer. Secondly, The wort is fermented by a combination of "clean" S. cerevisiae brewing yeasts, cultivated by the brewers over many decades, and wild yeasts such as Brettanomyces species. This co-fermentation imparts a funky complexity and heady aromatic quality to the beer.

Orval is also one of very few Belgian beers that is still carbonated by bottle conditioning, rather than force-carbonation. By this traditional method, the beer referments in the sealed bottle, producing a negligible amount of alcohol and carbon dioxide gas, which dissolves into the beer, carbonating it.
